INGREDIENTS:
Makes 8 breakfast patties
1 1/2 lbs of extra lean ground turkey
1/2 cup rolled oats (instant or larger flake blended till slightly powdery OR 1/2 cup gluten free falafel mix
1 egg
1 large onion, peeled and grated

Sausage spicing:
1 tsp thyme
1/2 tsp sage
1 tsp parsley
1/2 tsp cayenne pepper (or to taste)
1/2 tsp nutmeg
1/4 tsp ground cloves
salt and pepper to taste

Italian Spicing:
2 tsps basil
1 tsp garlic powder
1 tsp parsley
1 tsp onion powder
1/2 tsp cayenne pepper (or to taste)
salt and pepper to taste

DIRECTIONS:
Mix patty ingredients together with your choice of spicing blend.  Mix well. Divide into 8 portions to make into patties. (You can use plastic patty dividers if you have them or individually wrap them in plastic wrap and then place in a large Ziploc. )
Or, divide into 16 portions and roll into meat balls.
Patties or meatballs can be frozen until you are ready to use them

To cook patties heat a small amount of oil in a pan at medium high heat,  cook 2 patties per person until golden, flip and continue to cook till heated through.

A delicious way to serve them is to keep cooked patties warm in the oven and then deglaze the pan with a bit of water and a tsp of balsamic vinegar.  Add 1 cup mushrooms per person.  Cook until softened. Salt and pepper to taste. Add patties back to the pan.  Can be served over a lightly dressed salad or on half a toasted English muffin.
