Give Your Weekday Lunch a Salad Makeover

Welcome to Spring!

This fan of the cold weather is officially ready for spring – and so is the calendar! And with spring comes fresh veggies, CSAs (that’s community shared agriculture), farm visits and salads. Anyone else not the biggest fan of salads in the winter? Well, number one there’s a reason for this. When we eat cold foods when we’re already cold our body has to warm them up, so to speak. And that’s a lot of energy – but now that warmer weather is around the corner salads are an easy way to get more colour into your life!

… But what to put in them? I mean, there’s only so much you can do with iceberg lettuce. So here are some great ways to spice up your salad!

For starters … salads don’t have to be just vegetables like lettuce, celery, carrots, cucumbers – they can be filled with so much more than that! In fact, one of the easiest ways to easiest ways to change up your salad routine is the addition of more proteins and complex carbohydrates. Check out the suggestions below!

Kale (tip – warm it up in the microwave for 20 seconds with a bit of water first!)
