Chia Seed Pudding Recipe: MY EAST COAST KITCHEN

Your taste buds will never be the same after this Chia-Seed Pudding

Breakfast is important. Let’s be honest, when you wake up your body is in a state of fasting, and the morning is when you shift your digestive, hormonal and neurological systems into working their best for you. So let’s start that shift off right. I get it… mornings are busy, they’re rushed and the last thing you want to do is think about breakfast.
I’ve got your back. My chia seed pudding takes all of 30 seconds to put together and by the time you get to work/school everything will be done for you.

INGREDIENTS:
In 1 bowl (or container) combine:
3 tbsp chia seeds
½ cup almond milk
½ tsp vanilla

Topping:
Fruit (fresh or frozen)
Granola (check back Friday for my granola recipe)

Combine chia seeds and almond milk together, whisk in vanilla. I like my pudding a little thicker so that it holds the fruit and granola, but you can add more almond milk if you wish! Let set either a) overnight, or b) in the time it takes you get to work! Stir before eating as some of the chia seeds tend to sink to the bottom. Sprinkle fruit/granola overtop and enjoy! Your stomach will love you.
