Lentils. Something that is integral in the middle-east culture also happen to be some of the most nutrient dense foods on the planet. They’re a complete protein, they taste amazing and they’re the perfect lunch addition.

INGREDIENTS:
1- 16 oz can lentils drained
1 stalk celery finely chopped
3 green onions, sliced
1 cup diced cucumber, without seeds
1 large carrot, coarsely grated
1 cup cooked rice
1/2 cup Maple Balsamic Dressing
Green herbs to chop and add as desired (especially nice if just plucked from the garden)

DIRECTIONS:
Toss salad ingredients with Maple Balsamic Dressing.  Let chill to blend flavours.  Can be eaten with lettuce and cooked chicken or shrimp in a wrap or make a lunch salad by putting 1/2 cup of salad and 1 tbsp dressing in a lunch container and fill the rest of container with 2 cups shredded lettuce or greens.  At serving time, shake well to blend. Makes 4 servings
